Serves: 8 - 10
15 ml gelatine
50 ml water
250 ml Clover Bliss plain yoghurt
250 ml Clover Fresh Cream or additional Clover Bliss plain yoghurt
± 300 g washed and hulled strawberries
30 ml sugar (or to taste)
To serve and garnish
Additional strawberries with stems
Decoratively cut fresh or canned fruit or berries
Fruit purée or sauce (optional)
Place the gelatine in a small jug and cover with water.
Microwave on medium for 30 seconds – 1 minute or until just melted.
Place the yoghurt and cream, if used, in a food processor and process while adding the melted gelatine.
Add the strawberries and process on pulse only until the fruit is quite roughly chopped.
Add sugar to taste and pulse very briefly to combine without liquidising the fruit.
Pour the mixture into a ring mould or divide between 8 – 10 individual small moulds.
Refrigerate for at least 2 hours or until set before loosening, turning out and garnishing as explained above.
Replace the yoghurt, cream and strawberries with 750 ml of any flavour of Clover Classic yoghurt and continue as explained above.
